All of the O1 recipes work on our OPEN bottom Glass and Porcelain brewers, along with the OPEN bottom on the V4 Brewer.
BASIC PRINCIPLES
THE TYPE OF COFFEE USED MAKES A BIG IMPACT ON BREW TIMES
Dense, washed coffees will take longer to drain than more fermented soluble coffees. Each coffee is different and thus you will get slightly (or sometimes vastly) different brewing times from coffee to coffee. This is okay! Use your taste to judge what type of cup you enjoy most.
IDEAL RANGE
USABLE: 8 grams to 18 grams
BEST RANGE: 10 grams to 16 grams
POURING SPEED (FLOW RATE)
We pour with our standard 5 G/S or 50G in 10 seconds.
POURING STYLE
You could try to use more central pours on any of our recipes for this device, to promote faster drawdowns and brighter acidity.
GRIND SIZE
We display grind size advice in Comandante C40 Clicks (as it is our preferred hand grinder) but we also refer to grind size ranges like FINE, MEDIUM-FINE, MEDIUM, MEDIUM-COARSE, COARSE. We recommend you take our base recipe (Easy does it) and dial your grinder in based on our time guides and on your taste. Every grinder will produce a different profile and will interact differently with the paper filter.
ROAST LEVEL
Our recipes are designed around light (or even often very light) roast levels. If you are brewing more developed medium or dark roasts, please note that you should adjust parameters. In general the darker you go, we would recommend to decrease grind size gradually and lower water temperature - adjust to taste. We have not tested with dark roasts too much as of yet, and may prepare a guide section specifically for this later on. Just keep in mind that we designed and tested this device more around light roast coffee.
THERE IS NO NEED TO PRE-HEAT THE DEVICE
All of our recipes start with a room temp device and this is fine. Please note that if you pre-heat the device, you may end up with a different cup profile than what we do when we create the recipe.

Base ONE
A simple but effective recipe that should be familiar if you're transitioning from a V60 or Kalita brewer. Big brightness with lower sweetness, light body.

THE WIDE
A high extraction, wide ratio recipe for our flat filters.

Since we are using very fine grinds, we are going to have slower drawdown. Please adapt the grind size and water temperature by taste.

Adjust to slower pouring if you notice drawdown is too slow.

THE MID
A simple recipe that works great for all types of coffees.

Control your extraction time by changing the pouring flow rate.

This recipe is great for washed coffees but can work for naturals and more fermented coffees too.
EASY DOES IT
A simple pulse recipe that works great for all types of coffees. Adjust grind and temperature to taste.

THE FINE
A community favourite - a single pour recipe that produces a very interesting outcome with very low time commitment - always well under 2 minutes.
COFFEE: 12 GRAMS
WATER: 200 ML@ 94 CELSIUS
GRIND SIZE : FINE (15-18 CLIX)
FILTER : OREA WAVE
00:00 Pour 200G, the first 50G in a slow circular pour and the remaining 150G in a central slow pour.

That's it. It should be drained and ready to enjoy by 2 minutes.

The BYPASS
This a beautiful recipe by UK Brewing Champion Matteo D'Ottavio, with a bypass to balance the brew.
COFFEE: 18 GRAMS
WATER: 260ML + 30ML @ 96 CELSIUS
GRIND SIZE : MEDIUM (20-24 CLIX)
FILTER : OREA WAVE
00:00 Pour 60G, starting in a circular pour and ending in a central pour
00:40 Starting in a circular pour and transitioning to a central pour at a lower speed (4 G/S) to 160G
01:30  Starting in a circular pour and transitioning to a central pour at a lower speed (4 G/S) to 260G
02:30-3:00 Once the coffee has drained, add 15-30G (by taste) of water to the brewed coffee

The bypass controls the ending concentration of the brew. Bypass less for a more intense cup or more for a cleaner, smoother cup.We recommend to add the bypass water bit by bit, and taste to find your preferred dilution level.

THE TECHNO
All the way from the city of Berghain, a recipe that progresses and speeds up as it goes - by Mordy.

THE ICE
A great recipe for flash brews! A simple 4 pour recipe that gives a very bright flash brew that doesn't taste diluted and works very well with washed coffees.
COFFEE: 18 GRAMS
WATER: 160 ML@ 94C + 140G OF ICE
GRIND SIZE : MEDIUM (22-24 CLIX)
FILTER : OREA WAVE
Add 140G ice to the carafe

Make sure to sir and cool down the brew rapidly after brewing and to melt some of the ice. 
THE BRIGHT
A super easy recipe for low effort brews when you're sleepy in the morning. An easy 75/75/150 pouring cadence that makes a bright, happy cup!
