The OREA BIG BOY Brewer is a large format brewer designed for 2+ cups of coffee. In fact, the ideal range for this device is 40-60G of coffee for 600-1000ML of liquid.
BASIC PRINCIPLES
THE TYPE OF COFFEE USED MAKES A BIG IMPACT ON BREW TIMES
Dense, washed coffees will take longer to drain than more fermented soluble coffees. Each coffee is different and thus you will get slightly (or sometimes vastly) different brewing times from coffee to coffee. This is okay! Use your taste to judge what type of cup you enjoy most.
IDEAL RANGE
USABLE: 36 grams to 80 grams
BEST RANGE: 40 grams to 60 grams
POURING SPEED (FLOW RATE)
We pour with a slightly faster pouring flow rate than our standard 5 G/S for the smaller brewers, preferring to be more at 6 G/S for the bigger brewer. This can be as fast as 7 G/S for the bloom stage, to really saturate the bed quickly.  
GRIND SIZE
We display grind size advice in Comandante C40 Clicks (as it is our preferred hand grinder) but we also refer to grind size ranges like FINE, MEDIUM-FINE, MEDIUM, MEDIUM-COARSE, COARSE. We recommend you take our base recipe (Easy does it) and dial your grinder in based on our time guides and on your taste. Every grinder will produce a different profile and will interact differently with the paper filter.
ROAST LEVEL
Our recipes are designed around light (or even often very light) roast levels. If you are brewing more developed medium or dark roasts, please note that you should adjust parameters. In general the darker you go, we would recommend to decrease grind size gradually and lower water temperature - adjust to taste. We have not tested with dark roasts too much as of yet, and may prepare a guide section specifically for this later on. Just keep in mind that we designed and tested this device more around light roast coffee.
FILTERS
These recipes use the Big Boy Wave filters. As this brewer has a very wide bed (8cm / 3.15 inch) we recommend that you use pours big in volume and specifically over 150ml per pour (excluding the bloom stage). Our ideal pour volume is over 200ml per pour. Our recipes are designed with this in mind, taking advantage of the brewer volume and adapting pouring structure for desired volume.
RECIPE STRUCTURE
We prefer to keep our recipes with LESS pours, for smaller quantities and as we increase volumes, we increase the amount of pours.
THERE IS NO NEED TO PRE-HEAT THE DEVICE
All of our recipes start with a room temp device and this is fine. Please note that if you pre-heat the device, you may end up with a different cup profile than what we do when we create the recipe. Especially for this device, pre-heating is going to add nothing but waste of energy, since we already add so much thermal power with so much water for such small amounts of plastic in the body. Pre-wet with cold water or under the sink, where possible.
